  1. Mix flour + soy milk + baking soda + shredded coconut+ cocoa powder + 1 pinch of sea salt
  2. Peel bananas, cut into small pieces, stir into dough
  3. Fry pancakes in oil


Anyone who goes a few years back knows that I very much like to have pancakes for breakfast / lunch / dinner.
It did not matter what for an occasion there was to make these – pancakes were always welcome. My pancakes have always contained eggs and milk, that’s how I knew pancakes. In the last few months I have tried different vegan recipes, but I did not like the result …

Lately, I found a recipe by Attila Hildmann, did a bit of an expiriment on that and found my new favorite pancake recipe !! It is super easy, fast and guaranteed delicious.

Note: You can also take normal flour or wheat flour instead of spelt / buckwheat flour – but just I found the combination of spelled and buckwheat very right.

Ingredients for 2 portions:

  • 150g flour (75g spelled flour, 75g buckwheat flour)
  • 400ml soy milk
  • 2 bananas
  • 60g shredded coconut
  • 1-2 tsp coca powder
  • 2 tsp baking soda
  • Oil for the pan

… and how to top this?

  • Berries! Fuits! Veggies – everyone as he likes
  • maple syrup!

… and whoever dares to try my improvised coconut cream:

  • 150ml of coconut milk (solid!)
  • some agave nectar
  • some citron juice
  • some granted vanilla

…  mix all together & enjoy!
