Masala Chai – my favourite of all teas

I’ve always been a great fan of tea and spices such as cinnamon and vanilla.
I first got to taste this tea well… I actually can’t remember my first Chai … it’s probably been a while ago!

Anyways.. Chai is a super good mixture of black tea, oriental spices combined with milk … Mhhhh … Chai is available in some countries and each prepares its chai by old traditional recipe. In Nepal I tried the best, original chai.
It was so delicious that, no matter what time of day, I always ordered chai tea.
And this is the secret for a good chai:

Boil all ingredients straight together with water and the flavors will combine directly. In Germany we boil only hot water and then add the tea bag to the warter, but in Nepal you heat up everything together.

Back in Germany tried to cook the perfect chai like the ones I tasted in Nepal.
It took me some time until I had optimized my own recipe that satisfied me.

  •  1L water
  • 5 slices ginger, depending on how spicy you like your tea
  • 1/2 tsp ground pimento
  • 1/2 tsp ground cardamom
  • 1/2 – 1 tsp ground cinnamon
  • some vanilla
  • pinch of pepper
  • 1 – 2  tbsp brown sugar
  • 2 – 3 bags of black tea
  • 1 – 2 cups of milk (I prefer soymilk vanilla!)

how to make it:

  1. Boil water, ginger, sugar and spices together in a pot. Simmer for  5-10 minutes – the longer, the more stong it becomes
  2. Add black tea to the pot (loose or in bag) and simmer for around 3 mins.
  3. Remove tea from pot
  4. Take pot away from heat and stir in the milk
  5. Boil mixture again
  6. Remove spices with a sieve
  7. Enjoy!
